Yummy Fresh Living Salsa - Optimal You Cookbook by Christine Gingerich

  • 4 cups ripe tomatoes, chopped

  • 1 apple, peeled, cored and finely grated

  • 1/2 cup sweet onion diced

  • 1/2 cup green pepper, finely chopped

  • 1/2 cup fresh basil, finely chopped

  • 1 garlic clove, minced

  • 3 TBSP apple cider vinegar

  • 3 TBSP extra virgin olive oil

  • 2 tsp dried basil

  • 2 tsp oregano or 2 Tbsp finely chopped

  • 1 tsp sea salt

Mix all ingredients together. Allow the salsa to marinate for an hour.

Enjoy
