4 cups ripe tomatoes, chopped
1 apple, peeled, cored and finely grated
1/2 cup sweet onion diced
1/2 cup green pepper, finely chopped
1/2 cup fresh basil, finely chopped
1 garlic clove, minced
3 TBSP apple cider vinegar
3 TBSP extra virgin olive oil
2 tsp dried basil
2 tsp oregano or 2 Tbsp finely chopped
1 tsp sea salt
Mix all ingredients together. Allow the salsa to marinate for an hour.
